I haven’t been spending nearly enough time in the kitchen lately but yesterday I went all out. I make pork chops marinaded in maple syrup, scalloped potatoes & these delicious miniature stuffed peppers with goat cheese. Talk about tasty & they are only a five ingredient recipe. They look fancy & taste fancy but don’t require “fancy cooking skills”.
Miniature Stuffed Peppers with Goat Cheese
8 small assorted miniature colored peppers (orange, red, yellow)
4 ounces of goat cheese crumbles (1 small container)
4 ounces of cream cheese (1/2 package)
4 gloves of garlic
2 tsp basil *fresh is best but I used the dried stuff : (
Ready, set go! Preheat your oven to 350. Wash, halve & clean the insides of the peppers. Place the halved peppers on a foiled baking sheet along with the whole cloves of garlic.
Place the peppers in the oven for about 15 minutes while you prepare the filling.
Add the goat cheese & cream cheese to a microwave safe bowl & soften the cheeses for a minute in the microwave. Stir vigorously & set aside.
After the 15 minutes is up, take the peppers & garlic out of the oven. Let the peppers cool off & take the softened garlic cloves & mash them into the cheese mixture. Add basil & stir throughly, now your filling is done & ready to meet the peppers!
Stuff the peppers with the filling & return them to the oven for another 15 minutes. Serve them hot!
The goat cheese & sweetness of the peppers make such a mouthwatering appetizer. It takes about 35 minutes of prep & oven time total & just five ingredients, the result is so good!!!
