I’m way overdue on a cooking post so I decided to share these yummy Almond Joy Bars, no bake style. I love no bake cookies, I made them here for Valentine’s Day but we won’t jump ahead that soon. I was craving something sweet & no bake cookies are fast, easy & don’t make a mess of your kitchen.

No Bake Almond Joy Cookie Bars 

2 cups white sugar

1 stick butter (softened)

1/2 cup vanilla yogurt

1 tsp vanilla extract

3 cups quick oats

1/2 cup chocolate chips

1 cup coconut flakes

sliced almonds (for garnish)

 

You might have glanced through the ingredient list & said vanilla yogurt? What? Normally you add milk but I was out of milk & in the middle of this (always make sure you have the ingredients before you start) so I looked around the fridge & decided to experiment with the yogurt. It turned out fabulous – but if you want to just add milk instead feel free.

Use a large sauce pan & add sugar, butter, yogurt & vanilla extract. Stir it constantly over a low heat & bring the ingredients to a boil. Remove from heat & add in the remaining ingredients except for the almond slices & half a cup of shredded coconut.

Stir the mixture together throughly, the chocolate chips should melt & everything should be evenly coated. Pour the “batter” into a 9×9 inch square pan. Top with the rest of the shredded coconut & then the almond slices.

Refrigerate for at least two hours before cutting or serving.

    Oh Raquel, I just love Almond Joys. They rate as my all time favorite, right ahead of Butterfinger. Definitely making this!!!!!!
