As promised I’m keeping up with the healthy trend for recipes on the blog. This was breakfast on Saturday, it won the presentation, healthy & simple categories so of course I had to share. I call these stuffed peppers for breakfast. They can be made in so many different ways & are great for serving guests or just yourself.

Stuffed Breakfast Peppers (I made two so you will have to adjust your portions accordingly)

2 Green bell peppers

2 thin slices ham

2 eggs

shredded spinach

1 tsp black pepper

1/4 cup mozzarella cheese

Feel free to get creative & add anything you would like, this is just what I had on hand.

Preheat your oven to 350.

Wash, cut the tops off of the peppers & clean them out. Line them with ham – do not let ham stick out the edges too far or it will burn in the oven. Add an egg, spinach & black pepper to each. If you don’t want scrambled eggs you don’t have to mess with breaking the yolk but I prefer mine scrambled. Stick these in the oven for about twenty minutes.

After twenty minutes top with cheese on the pepper “lid” & the eggs. Bake for another ten minutes. Remove for the oven & serve immediately.

They turned out great, minus the burned edges on the ham. Don’t do that. Again it was my fault because I had too much sticking over the outside.

    I do love to indulge in a cooked breakfast on the weekends but it’s not exactly healthy, this looks absolutely scrummy…. and it’s healthy to boot! Thanks for the delicious recipe!
