Jalapeno Bacon Mac & Cheese, I’m not sure where to start. How about this? It tastes amazing, it’s the best comfort food ever & cheese + bacon + jalapenos = DELICIOUS. Once you have this Mac & Cheese will never want to eat any other kind again. This recipe was such a hit with everyone in my family that I just had to share it.

Jalapeno Bacon Mac & Cheese
Prep time
Cook time
Total time
A spicy mac & cheese with bold flavor.
Serves: 6 servings
  • 4 cups uncooked pasta (any shape)
  • 1 12 ounce package of bacon
  • 1 small red onion diced (about ¼ cup)
  • 2 or 3 small jalapeno peppers, thinly diced or sliced
  • *I only used two & had plenty of heat.
  • 1 tablespoon black pepper
  • ¼ cup butter
  • 1 pint whipping cream
  • 8 ounces extra sharp cheddar cheese, cubed
  • 8 ounces pepper jack cheese, cubed
  • 1 tablespoon flour
  1. Cook the pasta according to its directions on the box. You can work on prep work while it cooks & then drain & set aside.
  2. Add bacon, onions, jalapenos & black pepper to a skillet. Cook on a medium heat until the bacon is as crispy as you like. Spread some paper towels over your counter & empty the skillet over them. Blot off excess grease & crumble the bacon with your hands or use scissors to cut it into small pieces.
  3. In a sauce pan add butter & whipping cream, melt butter over a low heat.
  4. Add the cheese cubes & stir occasionally until everything is melted.
  5. Add flour & mix in completely, bring the cheese sauce to a boil & remove it from heat.
  6. Combine pasta, bacon with jalapenos & onions & pour cheese sauce over everything.
  7. Mix well, serve hot & enjoy.
  8. It's great to to garnish with a few bacon pieces or jalapenos.

Thank you for posting this recipe!! I was at work late yesterday and got all excited to go to the grocery store and get my ingredients to make mac & cheese, forgetting that you had not posted yet (a potential blonde moment). You could always tone it down & add just one jalapeno or I bet it would be great with sweet red peppers instead!!

  • I do enjoy homemade mac and cheese it is the best. This is an interesting recipe but, I won’t be trying it because of the bacon. Or maybe I could just skip the bacon.

  • Mac and Cheese is definitely one of my favorite comfort foods but I’ve never made it homemade. I’m going to have to make a vegetarian version of this soon, especially with the arrival of Fall temps.

This looks amazing, I haven’t made it yet but looking over the directions, I have a question.
Why do you add the flour to the cream-butter-cheese mixture instead of making a roux? Do you find it gives a better texture? Thanks.

    • Hi Sarah, this is the way my mom used to make her cream sauces for mac & cheese when I was growing up. It’s very creamy & I honestly can’t tell a difference between this & making a roux. You could make one if you preferred though.

  • This mac and cheese is absolute perfection!
